This recipe is for a 3-pound roast. I’ve made up to a 5-pound roast this way, too. Just add more herbs for larger cuts. And be sure to adjust your time. A 4 pound roast cooked at 70 minutes and a 5 pound at 80 minutes in my Instant Pot.
